Good Morning! I hope you are all having the best week. St. Patrick’s Day is quickly approaching and I thought it would be fun to surprise the girls with a festive St. Patrick’s Day breakfast. These lucky green pancakes were so easy to make and a big hit!
This festive breakfast is super easy to make! I just added some green food coloring to our pancake batter and cooked as normal. Once all the pancakes are made, stack them up on a plate. I used a gold paper plate that I already had in the pantry. Add a big scoop of whipped cream on top and pick out a few marshmellows from Lucky Charms cereal to sprinkle on top. That’s it!
I actually doubled the batch of pancakes and kept a few in the fridge. The girls have been requesting them every morning now for breakfast and they are quick to reheat when we are in a hurry. It’s such a fun, unique meal for my little picky eaters! Jeff even grabbed a few to eat on the way to work and I had some with a chopped banana on top. Yum!
